Servants are people, or things, completely devote to serving either an individual or entire group. Moral alignment is often considered that of the person(s) they are serving, as they don't really choose their own actions aside from the occasional social interaction. As such, they differ from henchmen in the sense that they can actually be serving someone of a high moral standing.
